Recipe inspired by Mary Berry Cake Batter 175gr butter 175gr self rising flour 175gr granulated sugar 3/4tsp baking powder Zest of 1 lemon 3 eggs 1/2tsp lemon extract(optional but recommended) 1pound baking tin Icing Around 100gr confectioners sugar(adjusted if needed) Juice of 1/2 a lemon Preheat your oven to 320f(160c) and line your greased baking tin with parchment paper. In a bowl, add your sugar and zest and rub against your hands to release the oils. Then add the rest of your ingredients and beat with an electric mixer until homogeneous. Add the batter to the tin and bake for 40min, or until a toothpick comes out clean. Make your icing, adjusting the consistency as desired, and brush it on top once the cake has cooled.
