Aaj hum banayenge Authentic Kolkata Style Chicken Biryani β soft chicken, melt-in-mouth aloo aur long grain chawal ke saath. --- π Ingredients For Chicken Marination Chicken β 1 kg (cut pieces) Dahi β 1 cup Ginger garlic paste β 2 tbsp Haldi β 1/2 tsp Lal mirch powder β 1 tsp Garam masala β 1 tsp Biryani masala β 1 tbsp Lemon juice β 1 tbsp Salt β 1 tsp Ghee/oil β 2 tbsp For Rice Long grain basmati rice β 1 kg Whole spices β 2-3 tej patta, 6-7 laung, 4-5 elaichi, 1 dalchini Salt β according to taste Shahi jeera β 1/2 tsp For Biryani Aloo β 3-4 medium (half boiled aur fry) Onion β 3 large (thin sliced, barista) Ghee β 4-5 tbsp Oil β 4-5 tbsp Doodh β 1/4 cup (warm) Kesar β 1 pinch (soaked in milk) OR biryani colour thoda sa Kewra water β 1 tsp Rose water β 1 tsp Nutmeg & mace powder (jaiphal + javitri) β 1 pinch Green chilli β 3-4 (slit) Mint & coriander β thoda sa (optional, Kolkata me kam use hota hai) --- π Step by Step Method 1οΈβ£ Chicken Marinate Ek bowl me chicken dalen. Dahi, ginger-garlic paste, haldi, lal mirch, garam masala, biryani masala, lemon juice, salt aur ghee dal kar mix karen. Kam se kam 1 hour marinate karen. (Overnight best) 2οΈβ£ Rice Preparation Rice 30 minutes soak karen. Boiling water me salt, whole spices, shahi jeera dalen. Rice 90% tak boil karen (thoda kadak chahiye). Strain kar ke side me rakh den. 3οΈβ£ Chicken Cooking Kadhai me oil + ghee garam karen. Sliced onion fry karke barista bana lein aur nikaal lein. Ab same oil me marinated chicken 80% cook kar lein. (Kolkata style me gravy thodi patli hoti hai) 4οΈβ£ Aloo Preparation Aloo ko half boil karke, Namak + haldi laga kar golden fry karen. --- 5οΈβ£ Dum & Layering (Slow Cook) Heavy bottom handi lein: Neeche thoda ghee First layer β rice Second layer β cooked chicken + thoda gravy Fried aloo place karen Barista sprinkle Warm milk + kesar pour karen Kewra + rose water (very little) Little nutmeg-mace powder Green chillies Upar fir rice layer Phir se barista, kesar milk, kewra water. Cap close karein aur dum par 30-35 min low flame me pakayein. --- β Tip for Authentic Kolkata Taste Ghee me thoda sa oil zaroor rakhein. Zyada garam masala mat use karein, Kolkata style biryani mild and aromatic hoti hai.
