Ingredients in Hindi 3 medium-sized boiled potatoes 2 cups sifted wheat flour 1 teaspoon salt to taste 1/2 teaspoon turmeric powder 1/2 teaspoon cumin powder 1 teaspoon coriander powder 1/2 teaspoon carom seeds 1 teaspoon red chili pepper 2 chopped green chilies 2 tablespoons ginger-garlic paste 1/4 cup chopped coriander leaves 1/2 teaspoon powdered sugar 1 tablespoon oil 1 teaspoon oil 5 cups oil for frying Instructions in Hindi Take a bowl, add the wheat flour and grate the potatoes into it. Add salt, turmeric powder, cumin powder, carom seeds, coriander powder, red chili, green chilies, ginger-garlic paste, and coriander leaves. Mix well. Add powdered sugar and oil. Mix well. Add water little by little as needed to form a stiff dough. Cover with a lid and let it rest for 15-20 minutes. Remove the lid, add 1 teaspoon of oil, and mix for a few seconds. Now take a small amount of dough, about the size of a medium lemon. Shape it into a ball with your hands, dip it in oil, and roll it out to form a large, puri-sized ball. Ensure the puri is slightly thick in size. Take a pan and add oil for frying. Heat the oil. Make small balls of dough and check them. Fry the puris one by one over medium-high heat. Keep turning the puris to ensure they are evenly fried on all sides. Repeat this process until they turn light pink. Remove the puri and repeat the same for the remaining dough. Give a circle shape with hands, dip into oil and roll it to form a big circle of puri size. Let the size of the puri be a little thick. Take a pan, add oil for frying. Heat oil. Check with a small size ball of dough, if it is frying. Fry the puri's one by one on a medium to high flame. Keep rotating the puri so that the frying is evenly on all sides. Turn and do the same until the color is light pink. Remove the puri and repeat the same for the remaining dough. Aloo Masala Puri is ready.
