PROTEIN COOKIE CAKE 🍪 ✅Ingredients 2 scoops (34g) @macro1nutrition ONE Protein, vanilla (sold out but can use any whey/casein blend) 1/2 cup (60g) all-purpose flour 1/2 cup (60g) peanut flour (PB powder, pb fit, etc) 1 whole egg 1/2 tsp vanilla extract 1/3 cup (75g) light butter, melted 1/2 cup (113g) unsweetened applesauce 1/3 cup (75g) Brown sugar substitute 1/2 tsp baking soda pinch salt 1/4 cup (60g) semi-sweet chocolate chips 📝Notes * a whey + casein blend protein which will bake differently than pure whey protein. ✅Instructions 1. In a large bowl, whisk together wet ingredients: egg, melted light butter, applesauce, and vanilla extract. 2. In a separate bowl add all dry ingredients: protein powder, AP flour, peanut flour, sweetener, salt and baking soda. 3. Combine wet and dry ingredients and mix together until a smooth dough forms. Should be a little more wet than a normal cookie dough. 4. Fold in chocolate chips. 5. Spray a 9-inch round pan with nonstick spray. Add batter to the pan. Sprinkle with a few extra chocolate chips on top. 6. Bake at 350F for 15 minutes. Center should be slightly underbaked.
