SUBSCRIBE To my channel 🧺 Ingredients πŸ”Ή For the koftas: Paneer – 1 cup (grated) Khoya (khoya) – 1/2 cup (grated) Cashew pieces – 1 tablespoon Salt Oil – for frying πŸ”Ή For the gravy: Onions – 2 (finely chopped) Tomatoes – 3 (chopped) Cashews – 10-12 Ginger-garlic paste – 1 tablespoon Red chili powder – 1 teaspoon Turmeric powder – 1/4 teaspoon Coriander powder – 1 teaspoon Garam masala – 1/2 teaspoon Kasuri methi – 1/2 teaspoon Cream (malai) – 3 tablespoons Salt – to taste Oil – 2 tablespoons Tablespoon Water – about 1 cup --- πŸ‘©β€πŸ³ Method Making the Koftas: In a large bowl, combine the paneer, khoya, and spices. Add salt, pepper, and cornflour or flour and knead well until the mixture is smooth. Now take a small amount of the mixture in your hand, place 1-2 cashews and raisins in the center, and shape into round koftas. Prepare all the koftas in the same manner. Fry them in hot oil until golden brown and drain on paper towels. Making the Gravy: Soak the cashews in hot water for 10 minutes and grind them finely with the tomatoes. Heat oil in a pan, add the onions and fry until golden brown. Add the ginger-garlic paste and fry until golden brown. Now add the tomato-cashew paste, along with turmeric, red chili powder, coriander powder, and salt. Cook the spices until the oil separates. Add water and let the gravy simmer for 5–7 minutes. Finally, add the garam masala, kasuri methi, and cream, and stir. Serving: Dip the koftas into the gravy just before serving (they may break if added earlier). Garnish with a little cream and coriander. πŸ› Serving Ideas: Paneer-khoya malai kofta goes great with naan, tandoori roti, butter paratha, or jeera rice.
