Radish Kimchi (Shredded) Prepare 2x white radish Peel, cut the ends off, rinse and cut into thin slices. Put them in a large bowl. Add the 3tbs salt and 5tbs sugar, mix well. Set aside for 30mins. Make the Kimchi base. Prepare 2tbs-minced garlic, 6tbs-hot pepper flakes, 3tbs-fish sauce and 3tbs-vinegar. Mix them all together in a bowl. Then, drain the juice from the radish, and add the radish to the kimchi base. Mix it all up with hands using gloves. Making sure the seasonings coat radish evenly. It's ready to be ladled into clean glass jars or containers. You can enjoy it right away as a fresh and flavourful salad or can let it sit in the fridge.
