
Caddy Clasp Final Shaping Sourdough
Shaping is important as you want to develop proper tension for the final rise or proofing. There are many ways to shape a loaf of sourdough, but here is one way. I first pre-shaped my dough and let it do a bench rest. Pre-shaping has multiple benefits, but one is that it makes final shaping easier. This method is called the Caddy Clasp. You will fold the bread into thirds, then rotate it 90 degrees and fold up both sides like you’re folding it in half.
