Swipe for recipes 👇 Day Plan: ✨ Breakfast: Muesli/granola with plant-based milk + Americano 🥗 Lunch: Glazed Carrots over Hummus 🍲 Dinner: Spicy Leek & Pumpkin Soup ✨Glazed Carrots & Hummus (Serves 2) Ingredients: 5 large carrots, peeled and cut into chunks Seasoning: 1 tbsp maple syrup 1 tbsp olive oil 1 tsp garlic powder 1 tsp dried chives 1 tsp flaky salt or salamoia bolognese 1 tsp paprika dolce 1 tsp balsamic vinegar Instructions: 1. Preheat your oven to 200°C (400°F). 2. Toss the peeled, chopped carrots on a baking tray lined with parchment paper. 3. In a bowl, mix together all the seasoning ingredients and drizzle over the carrots. Toss well to coat. 4. Roast for 30 minutes, or until caramelized and tender (don’t let them burn!). 5. For the hummus: Blend cooked chickpeas with a little of their cooking water for smoothness, a garlic clove, fresh parsley, salt (or salamoia bolognese), a generous scoop of tahini, and juice from half a lemon. Blend until fluffy and creamy. 6. Serve the roasted carrots on top of the hummus (or over rice, if preferred). ✨Leeks & Pumpkin Spicy Soup (Serves 2) Ingredients: 300g butternut squash, boiled for 10 minutes and mashed 1 leek, washed and finely sliced 1 tbsp olive oil 1 tsp paprika 1 tsp turmeric 1 tsp vegetable stock powder 2 tsp salt or salamoia bolognese For serving: Everything bagel seasoning and a drizzle of olive oil Instructions: 1. In a pot, sauté the leeks in olive oil until soft and translucent. 2. Add the mashed butternut squash and cook for another 10 minutes. 3. Stir in the spices and season with salt to taste. 4. Blend until smooth and creamy using an immersion blender. 5. Serve with a sprinkle of everything bagel seasoning and a drizzle of olive oil. 6. Optional: Toast some garlic bread in a pan with olive oil, seasoning the oil with a garlic clove, and top with a pinch of salt.
