GREEN GODDESSES SALAD🥰RECIPE BELOW 👇🏽

I’m quite literally obsessed with this healthy filling, tasty meal 🔥 You can prep the chicken, salad and pasta in jars or meal prep containers and just add the sauce and anything else you like before serving 🥰 Ingredients: •500g chicken thighs •1tbsp olive oil •juice of half a lemon •1tbs each paprika, oregano & onion powder •2 baby cos lettuce •200-250g pasta, uncooked Ceasar sauce: •3/4 cup greek yoghurt, 180g •1.5tbs olive oil 20ml •1tsp capers (could replace with anchovies (1-2) •1/4 cup spinach •1/4 cup fresh parsley •2tbs fresh chives •1tbs lemon juice plus 1/2 tsp zest •1 garlic clove-optional •Salt & Pepper To serve: •shaved parmesan Method: Add the chicken to the bowl with olive oil, lemon juice and seasonings. Mix well, then place the chicken onto a lined baking tray and roast at 220•C for approx 30 minutes until golden and cooked through. Remove and dice the chicken into cubes. Prepare the sauce by blitzing all ingredients together. Add a tbs or so of warm water if required to thin the sauce. Cook the pasta as directed by the packet. Assemble your salad. Add diced chicken to the base of a large jar, followed by chopped lettuce and pasta. Can prep like this for meal prep and flip onto a plate when ready to serve.
