Prepare Koftas 1. Mix paneer + potato + khoya + salt + chilli + coriander + cornflour. 2. Shape into small round balls. 3. Deep fry on medium flame till golden brown. Keep aside. 2. Make Gravy 1. Heat oil/ghee, sautΓ© onions till golden brown. 2. Add ginger-garlic paste β†’ fry 1 min. 3. Add tomatoes + cashews β†’ cook till soft. 4. Cool β†’ grind to a smooth paste. 5. Return paste to pan β†’ add turmeric, chilli, coriander powder. 6. Add khoya β†’ cook till oil separates. 7. Add water for curry consistency β†’ simmer 6–7 min. 8. Finish with cream, garam masala, kasuri methi. 3. Assemble β€’ Just before serving, drop fried koftas in hot gravy. β€’ Garnish with cream + coriander + a pinch of grated khoya.
