High-Protein Weight Loss Quinoa Khichdi This healthy and nutritious quinoa khichdi is a perfect high-protein recipe for weight loss. Ingredients Vegetables: 2 carrots 1 onion 2 tomatoes 2 green garlic 4-5 garlic cloves 1 green chili 1 cup green peas Fresh coriander for garnish Masala: Red chili powder Salt Dhaniya jeera powder (coriander-cumin powder) Other Ingredients: 1/2 cup combination of quinoa and red lentils (more quinoa than lentils) 1 1/2 cups water 1 tsp oil Mustard seeds Methi seeds (fenugreek seeds) Jeera (cumin seeds) Hing (asafoetida) How to Prepare 1. Prepare the Base: Wash the quinoa and red lentils thoroughly and set them aside. Chop all the vegetables using a chopper for convenience. 2. Cook the Khichdi: Heat 1 tsp oil in a pressure cooker and prepare the tadka by adding mustard seeds, methi seeds, jeera, and hing. Allow them to splutter. Add all the chopped vegetables to the cooker and mix well. Add red chili powder, salt, and dhaniya jeera powder. Mix to combine. 3. Combine and Pressure Cook: Add 1 1/2 cups of water to the vegetables and mix. Add the quinoa and red lentils mixture to the cooker and stir everything well. Close the lid and pressure cook for 3 whistles (1 on high flame and 2 on medium flame). 4. Serve: Once the pressure releases naturally, open the lid and give it a final stir. Garnish the khichdi with fresh coriander leaves. Serve hot with your favorite sabji or a side dish of your choice.
