Box 453 Greenwell Springs, LA 70739 EMAIL: [email protected] INSTAGRAM: / tales_from_an_empty_nest Chicken Pot Pie: 2 premade pie crusts 2 chicken breasts, shredded 1 bag frozen veggies, 12 oz 1 cup heavy whipping cream 1 3/4 cup chicken broth 3 tbsp butter 3 tbsp flour 1 onion, chopped 1 tsp minced garlic 1 egg salt, pepper, garlic, onion, Italian seasoning (however much you like) Preheat your oven to 400. Chop up the onion. Melt the butter and saute the onions. Once the onions are soft, add the garlic and cook for about a minute. Add in the flour and cook for 4-5 mins, stirring constantly. Add in the chicken broth and cook until it thickens, about 5 mins. Add in the heavy whipping cream. Add your seasonings. Cook until it thickens again. Taste throughout cooking to see if more seasonings are needed. Turn off the heat and add the chicken and veggies. Grease a pie pan and place one of the crusts into your pan pressing it to the shape of the pan. Pour in your filling and spread it evenly. Place the second crust on top and pinch the top and bottom crust edges together. Brush with egg wash and cut a few small slits into the top. Cover the edges with foil and cook for about 30 mins. Take off the foil and cook another 15 mins or until the top and edges are golden brown. Let it sit for a few minutes before cutting.
