The BEST red velvet cake ✨ My friend @thepancakeprincess does bake-offs, and this red velvet cake from @divascancook ranked #1 out of 9 recipes! I’ve shared the recipe below, along with some of my own notes. Thanks Erika and Monique! Cake:▪️2 Cups All-Purpose Flour▪️1 tsp Baking Soda▪️▪️1 tsp Baking Powder▪️1 tsp Kosher Salt▪️2 Tbsp Unsweetened Cocoa Powder▪️2 Cups Sugar▪️1 Cup Vegetable Oil (I used Avocado Oil)▪️2 Eggs▪️1 Cup Buttermilk▪️2 tsp Vanilla Extract▪️1 oz. Red Food Coloring▪️1/2 Cup Plain Hot Coffee, prepared (don't skip this ingredient)▪️1 tsp Distilled White Vinegar▪️ Cream Cheese Frosting (see tip):▪️4 x 8 oz. Blocks Cream Cheese, room temp ▪️1 Cup Unsalted Butter, room temp▪️2 tsp Vanilla Extract▪️4 Cups Powdered Sugar▪️ 1️⃣ Preheat the oven to 325F. 2️⃣ Generously grease 2 x 9-inch round cake pans and line the bottoms with parchment paper. 3️⃣ In a medium bowl, whisk together flour, baking soda, baking powder, cocoa powder, and salt. 4️⃣ In a large bowl, combine the sugar and vegetable oil. Mix in the eggs, buttermilk, vanilla, and red food coloring until combined. Stir in the coffee and white vinegar. 5️⃣ Add the dry ingredients to the wet ingredients a little at a time, mixing after each addition, until just combined. (Batter will be thin.) Pour half of the batter into each pan. 6️⃣ Bake on the middle rack for 30-40 mins or until a toothpick inserted in the center comes out with moist crumbs clinging to it. Do not over-bake as the cake will continue to cook as it cools. Let cool until the pans are warm to the touch (10-15 mins), then run a knife around the edge to loosen the cake, and transfer onto parchment lined plates to let them finish cooling. 7️⃣ Make the frosting: In a large bowl, cream together the cream cheese and butter with a hand mixer (or use a stand mixer). Mix in the vanilla extract, then gradually incorporate the powdered sugar. Mix until evenly combined. 8️⃣ Frost the cake and enjoy! Leftover cake + frosting should be stored in the fridge for up to 4 days.  Recipe serves 12 Tip: You’ll likely have some extra cream cheese frosting, but better to have too much than not enough!
