In case you’ve never heard of “nopales” which is prickly cactus. It is cactus that is high in fiber and very typical food in Mexican foods! I hope some people that are not use to it can try nopales! Below is some instructions on how to make them ⬇️ You can find them in small Mexican groceries and first you have to remove the prickly part. I remove them with a small blade but you can remove them with a knife as well. Cut them into small pieces and cook them no oil until they change color. Then add a little bit of oil and stir fry them for around 5 minutes. Then add more oil and add your eggs and scramble! I had them with beans and a yogurt because I tend to not have as many processed carbs in the morning.
