Easy Miso Ramen with Chanterelles | recipe under 15 minutes #veganrecipes

Miso Ramen with Chanterelles 🤝🏻 ready in 15 minutes Ingredients: (1 serving) about 1 tbsp white miso paste 2 spring onions + more to decorate 1 tsp minced ginger 2 large garlic cloves 1 tsp agave (optional) about 150g chanterelles lime juice (optional) to decorate. fresh cilantro sliced spring onion black sesame seeds (forgot to add them in the video) edible flowers if available Instructions: 1. In a pot heat some oil then saute the sliced spring onions, minced ginger and thinly sliced garlic until fragrant. Add chanterelles, miso paste and water (I added about 450ml) let it simmer for at least 10 minutes. Taste and adjust for more miso/more water or a tiny bit of agave if needed. (For optimal flavor start the soup in the morning and reheat when needed). 2. In the meantime cook the noodles, I used Mie Noodles, according to package instructions. 3. Add noodles to a bowl, cover with the soup and decorate as desired. 4. Enjoy! #veganmiso #misosoup #chanterelles
