Make the world’s best mashed potatoes! I'm going to show you how to make the World's best mashed potatoes the same way I learned to make them at a Michelin restaurant in Los Angeles. Recipe-- Start with 3 lbs of fingerling potatoes. Place potatoes in a heavy bottom pot and cover with cold water. Add salt. Allow potatoes to come to a high simmer, never boil, until tender. Strain and cool potatoes. Once potatoes are cooled, peel the skins off. In a small pot, heat 2 cups of milk, 2 cups of heavy cream, and 8 Tablespoons of Butter, cubed. Set aside. Once potatoes are peeled, you can put them through a Ricer or put them straight into a stand mixer or use a hand mixer. Slowly add the hot milk mixture to the potatoes and whip until desired consistency. Make sure to season to taste with salt and white pepper. Using a bench scraper, pass the potatoes through a TAMI to ensure zero lumps. Return to an adequate sized pot to reheat adding additional butter if necessary. Enjoy!
