Cinnamon Twists Dough 290g all-purpose flour 30g granulated sugar 3g instant yeast 2g salt 120g whole milk 1 tsp vanilla extract 1 large egg 60g unsalted butter Cinnamon Filling 70g unsalted butter, room temperature 100g light or dark brown sugar 2 tsp ground cinnamon Pinch of salt In a bread machine or stand mixer add flour, sugar, yeast, salt, milk, vanilla, and egg into a rough dough. Then add the butter and knead to incorporate. Shape into a ball, place in bowl and cover. Let it rise for 2 hours Mix all filling ingredients together in a small bowl until smooth and spreadable. Grease 8 holes of a 12-cup muffin tin Roll the chilled dough on a lightly floured surface into a 32 x 36 cm rectangle. Spread the filling evenly over the dough. Fold into thirds like a letter, to make a 12 x 32 cm rectangle. Cut into 8 strips (each 4 x 12 cm). Chill the strips on a lined tray in the fridge for 15 minutes. Take one strip, cut it lengthwise into 2 strands, leaving one end intact. Twist the strands, then roll into a bun shape, starting from the joined end. Place in the muffin tin. Repeat for all strips. Let rise until puffy an hour. Preheat oven to 190°C. Bake for 15–20 minutes, until golden brown Remove from oven and cool on a wire rack.
