🥕 CARROT CAKE BANANA BREAD 🥕 RECIPE BELOW 👇🏽 This is what happens when a carrot cake and banana bread get married ❤️ And let me tell you, this IS a match made in heaven. It’s sweet, moist, super easy to make and tastes INCREDIBLE. Enjoy it with or without the luscious vegan cream cheese frosting for a delicious breakfast or snack. INGREDIENTS ▪️4 large ripe bananas, mashed ▪️1/3 cup maple syrup ▪️1/3 cup coconut oil, melted ▪️1 and 1/4 cup self raising flour ▪️2 large carrots, grated ▪️2 tsp cinnamon ▪️1/2 cup pecans Topping (optional) ▪️3 tbsp vegan cream cheese ▪️2 tbsp vegan vanilla yoghurt (or plain) ▪️1 tbsp maple syrup ▪️1/2 tsp cinnamon METHOD ▪️Preheat oven 180c ▪️In a large bowl mix together the bananas, maple syrup, coconut oil and carrots. ▪️Then add the flour, cinnamon and pecans. Mix well ▪️Pour into a prepared loaf tin ▪️Mix the topping ingredients together ▪️Bake for 40-45 minutes or until a toothpick comes out clean ▪️Once cooled spread on cream cheese mixture, and top with extra pecans.
