I Turned Tiramisu Into a Cheesecake… With Homemade Ladyfingers! ☕🍰
What if your favorite tiramisu and cheesecake came together in one incredible dessert? ☕🍰 Today, we’re making a Tiramisu Cheesecake completely from scratch, starting with homemade ladyfingers! Instead of using traditional ladyfingers as they are, we turn them into buttery, espresso-infused crumbs and layer them between a rich, creamy cheesecake filling. The result is incredibly creamy, coffee-soaked, slightly bittersweet, and packed with classic tiramisu flavor. And the best part? Those ladyfingers are homemade! Light and airy on the inside, delicately crisp on the outside, and perfect for soaking up espresso. This is the kind of dessert that looks like it came straight from a beautiful bakery or café — but you can make it right at home. 🤎 🍰 Homemade Tiramisu Cheesecake Recipe Homemade Ladyfingers Ingredients: 3 large eggs, separated 75 g sugar 1 teaspoon vanilla extract 70 g all-purpose flour 20 g cornstarch A pinch of salt Powdered sugar, for dusting Method: Separate the eggs, keeping the yolks and whites completely separate. Beat the egg yolks with half of the sugar and the vanilla on high speed for about 5 minutes, until pale, thick, creamy, and ribbon-like. Using a completely clean and dry whisk, whip the egg whites until foamy. Gradually add the remaining sugar and continue whipping until you have a glossy meringue with soft-to-medium stiff peaks. Don’t overwhip the meringue. It should be stable, but still smooth and flexible. Fold the meringue into the yolk mixture in three additions, gently folding from the bottom up to keep as much air as possible. Sift together the flour, cornstarch, and salt. Add the dry ingredients in three additions, folding gently after each addition. Transfer the batter to a piping bag and pipe into a ladyfinger mold. This recipe makes approximately 24 ladyfingers. Dust generously with powdered sugar and bake in a preheated oven at 311°F (155°C) for about 15 minutes, or until lightly crisp and delicate on the outside while remaining soft and spongey inside. Let them cool completely. ⸻ ☕ Espresso Ladyfinger Crumbs Once cooled, transfer the ladyfingers to a food processor and pulse into fine crumbs. Add: 300 g homemade ladyfingers 100 g melted butter 1 shot espresso Pulse a few more times until the mixture resembles moist, sandy crumbs. ⸻ 🤍 Cheesecake Filling Ingredients: 600 g cream cheese or mascarpone 120 g powdered sugar 1 teaspoon vanilla extract A pinch of salt 200 g heavy cream 9 g gelatin 40 g cold water Sprinkle the gelatin over the cold water and let it bloom until soft and spongey. Meanwhile, beat the cream cheese or mascarpone, powdered sugar, vanilla, and salt until completely smooth and creamy. Add the heavy cream and mix just until fully combined. Gently melt the bloomed gelatin until completely dissolved. Before adding it to the cheesecake mixture, stir a spoonful of the cheesecake filling into the warm gelatin. This helps bring the temperatures closer together and prevents gelatin lumps. Add the gelatin mixture back into the cheesecake filling and mix until completely smooth. ⸻ 🍰 How to Assemble Using a 9-inch (24 cm) springform pan, spread about two-thirds of the ladyfinger crumbs over the bottom. Drizzle with a few tablespoons of espresso and press the crust firmly and evenly using the bottom of a glass. Add half of the cheesecake filling and smooth the surface. Add the remaining ladyfinger crumbs to create the second layer and gently press them into place. Drizzle with a few more tablespoons of espresso. Top with the remaining cheesecake filling and smooth the surface. For a pretty finish, use the back of a spoon to create soft waves across the top. Cover and refrigerate overnight so the cheesecake can fully set and all those tiramisu flavors can come together. The next day, carefully run a thin knife around the edge before releasing the springform pan. Finish with a generous dusting of unsweetened cocoa powder. Then slice, serve, and enjoy! ☕🤎 ✨ The final result? Two beautiful layers of espresso-soaked, buttery ladyfinger crumbs surrounded by an ultra-creamy cheesecake filling, finished with that classic tiramisu layer of cocoa.
