Panjabi Kadhi Pakoda | पंजाबी कढी पकोडा The Global Palate ‪@theglobalpalate09‬ 🔴Full Written Recipe Of Panjabi Kadhi Pakoda:- Ingredients: For Pakoras (Fritters): 1 cup besan (gram flour) ½ teaspoon red chili powder ½ teaspoon cumin seeds ½ teaspoon carom seeds (ajwain) Salt to taste Water (as needed) Oil (for deep frying) 1 small onion, finely chopped (optional) 1 small green chili, finely chopped 2 tablespoons chopped coriander leaves For Kadhi (Yogurt Gravy): 1 cup yogurt (curd), whisked 3 tablespoons besan (gram flour) 3 cups water 1 teaspoon turmeric powder 1 teaspoon red chili powder 1 teaspoon coriander powder Salt to taste For Tempering: 2 tablespoons oil or ghee 1 teaspoon mustard seeds 1 teaspoon cumin seeds 1 teaspoon fenugreek seeds (methi dana) 1 dried red chili 1 teaspoon ginger-garlic paste 1 small onion, finely chopped 1 small tomato, finely chopped 6-8 curry leaves ½ teaspoon garam masala 1 tablespoon chopped coriander leaves Instructions: Step 1: Prepare Pakoras In a bowl, mix besan, red chili powder, cumin seeds, ajwain, salt, chopped onions, green chilies, and coriander leaves. Add little water to make a thick batter. Heat oil in a deep pan and drop small portions of batter into hot oil. Fry until golden brown and crispy. Remove and drain on paper towels. Step 2: Prepare Kadhi In a mixing bowl, whisk curd and besan together. Add turmeric, red chili powder, coriander powder, salt, and water. Mix well to avoid lumps. Heat oil in a pan, add mustard seeds, cumin seeds, fenugreek seeds, dried red chili, and let them splutter. Add ginger-garlic paste and sauté until raw smell goes away. Add onions and sauté until golden brown. Add tomatoes and cook until soft. Add curry leaves and cook for a minute. Slowly pour in the kadhi mixture, stirring continuously to avoid curdling. Let it simmer on low flame for 15-20 minutes, stirring occasionally. Add garam masala and mix well. Step 3: Add Pakoras & Serve Once the kadhi has thickened, add the fried pakoras and let them soak for 5 minutes. Garnish with fresh coriander leaves. Serve hot with steamed rice or roti.
