Beef bourguignon is French inspired, named after the wine region but essentially is just a tasty simple to make beef stew. This can be made with any cheap cut of meat and done in an oven or slow cooker. Its rich great tasting and even better when cooked with short ribs. Serving size 3-4 Cooking time 7 hours Ingredients 3-4 beef short ribs or 1-1.5kg of low budget beef cut into chunks 1 litre beef stock 500ml beef bone broth 500ml red wine small bunch thyme 2 carrots 1 brown onion 200g Swiss mushrooms 200g short cut bacon 6 potatoes 2 tbsp butter 200ml milk 100ml brandy 1/2 cup plain flour Method Cut the onion and bacon into large chunks cook until onion is soft and bacon starts to colour then remove. In the same pot brown the beef on all sides and remove. Remove any excess oil from the pan and deglaze(clean) with brandy to remove burnt parts from pan but do not discard as this is great flavour. In your slow cooker or the large pot you used to cook the ingredients add the beef stock , bone broth and wine. Chop carrots and mushrooms into large pieces then add the beef to the braising liquid followed by carrots, mushrooms , bacon onion and thyme. Place into an oven at 150c/302f for 4-6 hours alternatively it can be cooked on low heat on a stove top or in a slow cooker. Approximately 1 hour prior to the end of cooking thicken the sauce with some plain flour. The best method is to use a sieve in the sauce add some plain flour and whisk until desired thickness is achieved. This will prevent any lumps, be sure to cook for a further hour to break down the flour taste. while the stew is cooked make some mashed potato by peeling 6 potatoes , cutting into large chucks then cover with water and bring to boil in a pot. Use a fork to poke and test if soft , when cooked drain the water and place back into the pot. Add 2 tbsp of butter and a splash of milk then start mashing the potato. Slowly add more milk until a creamy ice cream like texture is achieved. To make a super smooth mash simply add some more milk and use a stick blender to blend to a fine consistency. When the stew is ready add a splash of brandy and serve on a bed of mash potato.
