A comforting, cheesy twist on classic potatoes—these Potato Spinach Bites are the perfect side dish! Ingredients: 450 g (16 oz) potatoes (with skin on) 300 g (10.6 oz) raw spinach 80 g (2.8 oz) cheese (your choice, such as mozzarella or provolone) 30 g (2 tbsp) butter (melted) Breadcrumbs (for coating muffin tins and topping, as needed) Olive oil (for greasing and drizzling, as needed) 1 garlic clove (optional) Salt (to taste) Pepper (to taste) Nutmeg (a pinch) 1. Begin by boiling potatoes with their skin on in salted water for about 40 minutes, or until completely tender. 2. Once tender, remove the peels and use a potato ricer to mash the potatoes until smooth. 3. In a pan, heat a drizzle of oil (and a garlic clove, if desired) and sauté the spinach for a few minutes until wilted and reduced in volume. 4. In a bowl, combine the mashed potatoes, sautéed spinach, salt, pepper, nutmeg, and melted butter. Mix well. 5. Prepare the muffin tins by oiling them with olive oil and sprinkling breadcrumbs on the bottom and sides. 6. Scoop the potato-spinach mixture into the prepared muffin tins. 7. Add a small amount of cheese to the center of each portion. 8. Cover each muffin with more breadcrumbs and drizzle with a bit more oil. 9.
