
Banana Chocolate Chip Muffins You NEED to Try! 🍌🍫🤤
INGREDIENTS: 2 ripe bananas (brown is best) 1 C. cottage cheese 2 eggs ¼ C. coconut oil ⅓ C. brown sugar 1 tsp vanilla extract 1 ½ C. all purpose or GF flour 1 tsp baking powder ½ tsp baking soda ¼ tsp salt Preheat the oven to 350 degrees fahrenheit. Into a bowl, mash bananas with a fork. Add cottage cheese, eggs, oil, sugar, and vanilla. Whisk to combine thoroughly. Into another bow, add flour, baking powder, baking soda, and salt. Whisk to combine. Add about ⅓ of the dry mixture into the wet mixture with a wooden spoon, mix until just combined. Continue adding thirds, and then chocolate chips last, until finally combined, but do your best to not over mix. This batter will feel quite thick and that is okay! Line a tin with paper liners and grease with cooking spray. Using a cookie scoop, evenly dole out scoops into cups; I used about 2 full cookie scoops per cup. Bake for 25 minutes. Remove from the oven, and let cool.
