Banana muffins healthy ( recipe in description)
Ingredients (10–12 muffins): • 3 medium ripe bananas (mashed) • 1/3 cup unsalted butter (melted & slightly cooled) • 2 eggs (room temperature) • 1/4 cup honey or jaggery powder (or brown sugar if preferred) • 1 tsp vanilla extract • 1 cup whole wheat flour • 1/2 cup oats (ground slightly or left whole) • 1 tsp baking soda • 1/2 tsp cinnamon • Pinch of salt • Optional: 1/4 cup walnuts / seeds / dark chocolate chips ⸻ Method: 1. Preheat oven to 180°C (350°F). Line a muffin tray. 2. In a bowl, mash bananas well. 3. Add melted butter, eggs, honey (or jaggery), and vanilla. Mix until smooth. 4. In another bowl, combine flour, oats, baking soda, cinnamon, and salt. 5. Fold dry mix into wet gently – don’t overmix. 6. Add nuts or choco chips if using. 7. Divide batter into muffin cups (about 3/4 full). 8. Bake for 15-22 minutes, until golden and a toothpick comes out clean. 9. Cool before eating (they’ll be super soft and moist!).
