
💥Olive Garden Copycat Pasta Fagioli Soup
This is a simple one pot dish and it comes out SO freakin good and is INSANELY easy to make. Here is how I made it: 1. First start off by browning your lean ground meat. I used 1 1/2 pounds of 96% carrots 🥕 1 tablespoon of oregano 🌿 1 tablespoon of basil 🌿 1 tablespoon of Italian seasoning 🌿 1 tablespoon of tomato paste 🍅 2 15oz cans of petite tomatoes 🥫🥫 1 small can of tomato🥫 sauce 2 cups of chicken broth 1 tablespoon of white sugar and mix everything together. Let it come to a simmer and add 1 15oz can of cannellini beans 🫘 1 15oz can of kidney beans 🫘 1 bay leaf 🍃 mix well. Cover and allow to simmer on low heat for the next 30 minutes. 3. Cook 1/2 pound of Ditalini pasta separately with plenty of salt for 7 minutes. Remove and rinse with cold water to stop the cooking process. 4. Once your soup has been cooking on low heat for 30 minutes add in your pasta (I added 2 cups of cooked pasta) add more or less if you like. That’s to your liking. 5. This is the time to add more chicken broth and salt if needed. 6. Top with parsley 🌿, Parmesan cheese and dry chili flakes.
