
High protein, low carb, gluten free blueberry pancakes!! Simple and delicious 
I needed a high protein breakfast alternative to just eating eggs. These high-protein, blueberry pancakes are my latest cheat code! Low carb, super fluffy, and gluten-free... Delicious and Nootritious. Blueberry Almond Flour Pancakes Ingredients: • 1 ½ cups almond flour • ⅓ cup @formnutrition protein powder • 1 ½ teaspoons baking powder • ½ teaspoon vanilla extract • 3 large eggs • ⅔ cup almond milk • ½ cup fresh blueberries • 2 tbsp extra-virgin olive oil • Maple syrup for serving Instructions: 1. In a medium bowl, whisk together the almond flour, protein powder, and baking powder. 2. In a separate bowl, beat the eggs, then add the almond milk and vanilla extract. Mix well. 3. Pour the wet ingredients into the dry ingredients, stirring until just combined. Gently fold in the blueberries. 4. Heat a lightly oiled nonstick pan over medium heat. Pour ¼ cup of batter onto the pan for each pancake. 5. Cook for 2-3 minutes per side, until golden brown. 6. Serve warm with maple syrup.
