Add garlic cooking until fragrant, approx 2 minutes. Add ginger, coriander, garam masala, cumin, turmeric, cayenne & pepper. Cook 1 - 2 minutes. Place the chicken in your slow cooker. In a medium sized bowl or measuring cup whisk together the soy sauce, honey, tomato paste, rice wine vinegar, sriracha, garlic & ginger until well combined. Pour over chicken and replace lid. Cook on low for 4 - 5 hours or high for 2 - 3 hours. Internal temperature on chicken shouold be 165 F Remove chicken and shred with 2 forks. Add water to cornstarch, mix well. Pour into slow cooker and cook on high for 15 minutes. Add chicken back into the sauce and serve over rice or mashed potatoes.
