Sweet Potato Rolls - Sweet Potato Dinner Rolls Recipe - Ellen’s Thanksgiving Series 🍠🍞

Hello and Happy Thanksgiving my Friends, welcome to my Southern Kitchen! On the seventh episode of my Thanksgiving Series, I am making classic dinner rolls but with a twist, Sweet Potato Dinner Rolls! Soft, fluffy and full of Sweet Potato flavor and brushed with a yummy Sweet Potato Cinnamon glaze! A great new addition to your Thanksgiving dinner and everyone will love and enjoy these!! 1 medium-large sweet potato 1 cup buttermilk, room temperature 4 tablespoons (1/2 stick) unsalted butter, melted and cooled 2 extra-large eggs, lightly beaten 3 tablespoons honey or white sugar 2 1/4 teaspoons (1 packet) instant yeast 1 1/2 teaspoons salt 1/4 teaspoon ground cinnamon 1/8 teaspoon ground nutmeg 1/8 teaspoon ground ginger 4 3/4 cups all-purpose or bread flour Sweet Potato Cinnamon Butter 8 tablespoons (1 stick) unsalted butter, softened 4 tablespoons powdered sugar 1/4 teaspoon ground cinnamon 1/4 teaspoon pure vanilla extract 2 tablespoons purée sweet potatoes Ellen’s Magic: You may use active dry yeast instead of instant yeast, add in 1/4 cup warm water to 110 degrees and add in 1/4 teaspoon white sugar, stir and let it sit until frothy about 5 to 7 minutes. Make sure you make that first before you start on the recipe. For the sweet potatoes: Preheat oven to 400 degrees. Wrap the sweet potatoes in a layer of aluminum foil, place it on a 9-inch round cake pan, and bake until a fork or knife easily pierces the flesh, about 35 to 55 minutes. Remove from the oven and remove the foil and peel the skin off, transfer the sweet potato into a bowl and mash it using a potato masher. Pour the mashed sweet potatoes into a blender or food processor then purée until smooth. In a large bowl, add in the flour, salt, cinnamon, nutmeg, and ginger; whisk or sift together until well blended and set aside. In a stand mixer using a dough hook or bowl using a hand mixer, add in the buttermilk, butter, eggs, honey (or sugar), yeast, and puréed sweet potatoes and stir together until well blended. Add in 2 cups of the flour mixture and stir until the dough forms a rough, shaggy mass on medium-low speed. Next gradually add in the remaining flour, kneading until a mass of dough begins to forms; continue kneading on medium-high speed for about 4 to 5 minutes until a soft, smooth ball of dough is formed (the dough should feel elastic and slightly tacky to the touch,If the dough is unbearably sticky, add more flour 1 tablespoon at a time). Lightly spray a large clean bowl with cooking spray or brush with oil and place the dough in the bowl. Cover the bowl lightly with plastic wrap, let it rise for about 1 hour at room temperature or until the dough is big, puffy, and about doubled in size. Spray a 13×9 inch baking pan with cooking spray. Gently punch a hole in the center of the dough then place it on a lightly floured surface and knead a few times. Using a bench scraper, knife, or pizza wheel, divide the dough into 12 equal pieces. Cover again and let it rise for 30 minutes or until doubled in size. Preheat Oven to 375 degrees Remove the plastic wrap from the rolls and brush them all over the top with whole milk. Bake the rolls for 15 to 20 minutes, or until golden brown. Remove from the oven and brush on top with the sweet potato cinnamon butter. Serve warm and enjoy! For the Sweet Potato Cinnamon Butter In a small bowl, add in the butter, powdered sugar, cinnamon, vanilla extract, and purée sweet potatoes and mix until well combined.
