Detailed recipe 👇 Serves 2 Ingredients: FOR CREAM CHEESE 500 ml milk 2 tbsp vinegar 1/2 tsp salt FOR THE SAUCE 15 to 20 grams cashew (toasted & turned into coarse powder) 25 grams butter 1 onion, finely chopped, 2 cloves of garlic, finely chopped 1/2 tsp chili flakes 1 small bunch spinach (blanched and made into paste) 2 cups of pasta water salt FOR PASTA 200 grams pasta (fusilli) 5 to 6 cups water salt Method: 1. Start by heating the milk till it's warm to the touch (do the finger test). Add salt and vinegar to it and turn off the flame. Stir gently until the milk curdles. Separate the whey and cheese using a muslin cloth. Wash the cheese with fresh water. Let it rest for some time (do not keep any heavy object over it as we want the cheese to be creamy). 2. Toast the cashews and make a coarse powder. Keep it aside. 3. Boil some water and turn the flame off. Then, add the spinach to it and leave for 5 mins. Remove and immediately add it in a bowl of cold/iced water. Leave for 5 mins. 4. Now that the water is completely drained from the cheese, blend it into a paste. 5. Squeeze excess water from the spinach and blend it into a paste, too. 6. Now, in the pan, heat some water with a generous amount of salt and add your pasta to it. Let it cook up to 80% or Al dente. 7. As the pasta is cooking on one side, start preparing the sauce. Add butter, garlic, onion and chili flakes in a pan and cook for 5 mins (until the onion turns pink). Add the spinach paste, cooked pasta and smooth cheese. Mix well. 8. Lastly, add pasta water, salt (if needed) and cashew powder and give everything a good toss. 9.
