Put some Sugar & boil it till it turns thick. Then keep it for cooling down & keep the thick Milk in the fridge. For Sugar Syrup, in a pan, put Sugar & Water, when Sugar gets melted, put some Lemon Juice, Cardamom & Rose Water then make the Sugar Syrup of 1 string. For Ghevar, take a mixer jar, put Ghee, Ice Cubes & churn them. Then put some Milk & churn it again. Then put All-Purpose Flour in it gradually & churn it again & again by adding Chilled Water in it. Put some Lemon juice also & make a loose batter. Take out it in a steel bowl & place the steel bowl on an ice-cold water bowl. Fill the batter in a sauce bottle. Keep a vessel on the flame, put Refined Oil/Ghee in it for heating & put the batter in it gradually as shown in the video. Keep the fried Ghevar on a strainer, put Sugar Syrup & Rabri on the Ghevar then garnish it with chopped Pistachios, Saffron & Silver Leaf. In this way, without any mould, Halwai Style Ghevar will get ready very easily at home.
