Ingredients: • 1 cup (125g) all-purpose flour • 1/4 cup (50g) granulated sugar • 1/4 tsp salt • 1 tsp baking powder • 1/4 cup (60ml) milk • 1/4 cup (60ml) vegetable oil (or melted butter) • 1 large egg • 1/2 tsp vanilla extract • 1/2 cup (90g) chocolate chips (plus extra for topping) ⸻ Instructions: 1. Preheat oven to 180°C (350°F). Line or grease a muffin tin with 6 liners. 2. In a bowl, whisk together the flour, sugar, salt, and baking powder. 3. In a separate bowl, whisk the egg, milk, oil, and vanilla extract until smooth. 4. Pour the wet ingredients into the dry and mix until just combined — do not overmix! 5. Fold in the chocolate chips. 6. Divide the batter evenly among 6 muffin cups. Top with a few extra chocolate chips. 7. Bake for 18–22 minutes, or until a toothpick comes out clean or with just a few moist crumbs. 8. Let cool in the pan for 5 minutes, then transfer to a rack.
