No-bake chocolate chip cookie dough bars! They’re gluten free, dairy free, and refined sugar free, and so easy to make. Cookie Dough: •1/2 cup natural peanut butter •3 tbsp coconut oil, melted •1/3 cup pure maple syrup (room temp or slightly warmed) •1 tsp pure vanilla extract •1 1/4 cups oat flour (I use homemade) •3/4 cup almond flour •1/2 tsp salt •2.5 oz dark or semi-sweet chocolate chips or chocolate chopped into pieces (I use dairy free and refined sugar free) Chocolate Ganache: •5oz dark or semi-sweet chocolate (I use dairy free and refined sugar free) •3 tbsp hot water Instructions: 1. Add the peanut butter, melted coconut oil, maple syrup, and vanilla extract to a large bowl and mix until smooth. Once mixed, add in the oat flour, almond flour, salt, and chocolate and mix until a smooth dough forms. 2. Add the cookie dough to a standard loaf pan lined with parchment paper and smooth it out. 3. Next, melt the dark chocolate and hot water together (on the stovetop using the double boiler method or in the microwave). Once melted, spread the chocolate ganache over the cookie dough then place in the fridge to harden for at least 1 hour. 4. Once hardened, remove from fridge, slice, and serve!
