Today, I'm sharing one of my favourite go-to meals: Huevos Rancheros, also known as Ranch Eggs. It's an authentic Mexican dish that's easy to make, inexpensive, and absolutely delicious. This authentic recipe comes from an old Mexican cookbook and is sure to be a hit with your taste buds. It's easy to make, budget-friendly, and packed full of delicious flavors that will transport you straight to Mexico. Join me as we prep the ingredients, make the sauce, warm up some corn tortillas, fry some eggs, and plate up this mouth-watering dish. Ingredients: 1 small onion, finely diced 2 small cloves of garlic, finely diced 2 tablespoons of finely diced Jalapeno chillies or 1 serrano chilli 2 tablespoons of finely diced coriander (cilantro) 5 medium-sized fresh tomatoes, seeded and diced 1 small teaspoon of salt 1 teaspoon of sugar 1/2 teaspoon of cracked black pepper Tortillas Eggs Butter Olive oil Serves: 4 It is really simple, delicious and something different.
