
Keto S'mores Cookies
These sugar-free, gluten-free, dairy-free, low-carb, keto-friendly s'more cookies are easy and delicious! • 1 cup Cashew Butter • ½ cup Brown Sugar Replacement (if you're not aiming for a sugar-free/keto version, use regular brown sugar) • 1 Egg • ½ cup Sugar Free Dark Chocolate Chips • 1 teaspoon Vanilla Extract • ¼ teaspoon Bi-Carb Soda • Sugar Free Marshmallows 1. Mix everything but the marshmallows until well combined. 2. Scoop a dessert spoon's worth and flatten into a disk in your palm. Place one marshmallow in the centre. Push and pinch the batter up and around the marshmallow. Roll to smooth into a ball. 3. Refridgerate for 45 minutes, then place on a baking tray with baking paper. OR 3. Place balls into a non-stick muffin tin. 4. Bake at 180ºC for 10-15 minutes.
