Gungo Peas and Rice is sooo good! Rice and Peas (red kidney beans) is a bit more popular in Jamaican homes and restaurants but Gungo definitely holds a special place in our hearts. Hope you enjoy! The same ingredients can be used for OVEN method and STOVETOP method. Ingredients: ✅ Added to my instant pot (with pressure cooker setting): 1 cup Dry gungo peas, rinsed several times and drained 4.5 cups water 3 cloves Garlic 1 1/2 - 2 tsps salt to taste . . . ✅To the heavy bottom pot on the stove, add: All the pressure cooked ingredients (The garlic, the tenderized peas and about 3 - 3 1/2 cups liquid left in the pressure cooker) 1 cup of canned or homemade coconut milk 3 stalks scallion, chopped 4 sprigs fresh thyme 4 - 6 whole allspice berries 2 - 3 more cloves garlic, sliced a few slices ginger 1/2 tbsp green seasoning • JAMAICAN GREEN SEASONING || JERENESEA... 1 1/2 tbsp virgin coconut oil (optional) 1/2 - 1 tsp sugar (optional) Salt to taste 1 1/2 tbsp unsalted butter 3 cups long grain rice 2 whole scotch bonnet peppers
