Malva pudding is one of South African decadent desserts. It is moist, sticky like toffee and delicious. It is mostly served with custard or pastry cream or ice cream. It is easy to prepare and can be baked ahead and stored in the fridge. That is what I did on this one. I cooled it on the table top then covered it with a foil and store it away in the refrigerator. Enjoy! This is 4-5 servings Baked in a 23cm or 9 inch pan, standard oven preheated to 180 degrees C or 356 degrees F Fan oven to 170 degrees C Tip: Do not open the oven whilst baking time has not lapsed, which is between 45-60 minutes Meanings: tsp -teaspoon Tbsp -tablespoon 1 cup is 250ml INGREDIENTS FOR BATTER: 1 large fresh egg 2 tsp vanilla extract or essence 2 tbsp butter or margarine, softened 2 tbsp apricot jam 1 cup granulated sugar or any brown 1 tbsp white vinegar or ACV 1 cup cake flour 1 cup fresh cream or fresh milk 1 tsp bicarbonate of soda 1/2 tsp baking powder 1/4 tsp cooking salt FOR SAUCE: 1 cup fresh milk 3 tbsp butter or margarine 3 tbsp granulated sugar 1 tsp vanilla extract or essence HOMEMADE SALTED CARAMEL: 1 cup of white granulated sugar 1 cup of whipped cream or milk, warm 1/4 tsp salt Method: At medium heat, in a pan, place sugar and wait until it turns brown Once it starts turning brown, reduce the heat to low Move fast and stir it.
