
Tuscan Shrimp 🍤
Tuscan Shrimp I love all Tuscan dishes. I think the flavors are absolutely delicious! I eat mine as is but this would also be good over steamed broccoli or cauliflower rice. RECIPE: Makes 5 cups INGREDIENTS: 3 Tbsp butter 2 tsp minced garlic 1 Tbsp tomato paste 1 lb raw, peeled shrimp 1 pint of sliced mushrooms 1 cup of grape tomatoes, halved 1/2 tsp salt 1/2 tsp black pepper 1 cup heavy cream 1 cup of shredded Parmesan, divided 1-2 cups fresh baby spinach STEPS: 1. In a skillet over medium heat, melt the butter and garlic. 2. Add the raw shrimp to the skillet and cook for about 2 minutes per side or until pink. 3. Remove the shrimp from the skillet for later. 4. Add the mushrooms to the skillet and cook for a couple minutes. 5. Next, stir in the tomatoes, tomato paste, salt, pepper, heavy cream and 3/4 cup of the Parmesan. 6. Turn the heat to medium-low and put the shrimp back into the skillet. 7. Once the cheese has melted, add the spinach to the skillet and stir until wilted. 8. Top with the remaining Parmesan cheese.
