If using, mix in the coffee liqueur. In a blender or food processor, combine the silken tofu, coconut cream, maple syrup and vanilla extract. Blend until smooth and creamy. Dip each tea biscuit into the coffee, flipping them quickly and make sure they’re completely soaked. Don’t soak for too long otherwise they’ll get soggy. Layer half of the soaked tea biscuits in the bottom of the 8x8 baking pan. Spread half of the cream mixture over the tea biscuits. Repeat the layers with the remaining tea biscuits and cream mixture. Cover the dish and refrigerate for at least 4 hours, or overnight for the best flavor. Before serving, dust the top with cocoa powder. Enjoy your delicious and healthy vegan tiramisu! Important Notes: Tofu: When dealing with tofu, slight variations in weight are acceptable. The most important thing is to drain it thoroughly. If you can’t find silken tofu, you can replace with 1 cup raw cashews (soaked for at least 4 hours and drained). Coconut Cream: When using canned coconut milk, chilling it will cause the cream to separate from the liquid. Scoop out the thick cream portion for this recipe. Feel free to modify the sweetness and coffee intensity to suit your taste.
