🎃🧁 Pumpkin Cream Cheese Muffins 🧁🎃 Ingredients 🛒 Muffins: 1 ½ cups flour (192g) ½ tsp baking soda 1 tsp cinnamon ½ tsp ground cloves ½ tsp nutmeg 1 cup sugar (200g) ½ cup oil (112g) ¾ cup canned pumpkin (184g) 2 eggs 1 tsp vanilla extract (Optional) Cream Cheese Filling: 4 oz cream cheese (113g), softened 2 tbsp sugar 2 tsp milk 1 tsp flour ½ tsp vanilla extract Instructions 📝 Cream Cheese Filling (optional): 1. Mix all filling ingredients in a small bowl until smooth. 2. Transfer to a ziplock bag or piping bag; set aside. Pumpkin Muffins: 1. Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners. 2. In a medium bowl, whisk together flour, baking soda, cinnamon, cloves, and nutmeg. 3. In a large bowl, whisk sugar, oil, pumpkin puree, eggs, and vanilla until well combined. 4. Add dry ingredients to wet ingredients; mix until just incorporated. 5. Scoop batter into muffin liners, filling each about ¾ full. 6. Pipe or spoon a small dollop of cream cheese filling into the center of each muffin. 7.
