Recipe Ingredients: • 500g Paneer (cut into cubes) • 750g Spinach (Palak), washed and roughly chopped • 1 handful fresh coriander leaves • 2 medium onions, chopped • 1 medium tomato, chopped • 2 tbsp chopped garlic • 3 green chilies • 1 medium piece of ginger • 1 tsp turmeric powder • 1 tbsp Kashmiri red chili powder • 1 tbsp cumin powder • 2 tbsp fresh cream • 20g butter • 2 tbsp Kasuri methi (dried fenugreek leaves) • Salt to taste Instructions: 1. Blanch the Spinach: • In a large pot, bring water to a boil. Add the chopped spinach and blanch for 2-3 minutes until wilted. Drain and immediately transfer the spinach to a bowl of ice-cold water. This helps retain its green color. 2. Make the Spinach Purée: • Once cooled, drain the spinach. In a blender, add the spinach, coriander leaves, green chilies, and ginger. Blend into a smooth paste and set aside. 3. Sauté the Paneer: • In a large pan, heat a bit of butter. Lightly fry the paneer cubes until golden brown on all sides. Remove and set aside. (This step is optional if you prefer softer paneer.) 4. Prepare the Masala: • In the same pan, add the remaining butter. Add the chopped onions and sauté until golden brown. • Add the chopped garlic and cook for another minute. • Stir in the chopped tomatoes and cook until the tomatoes become soft and mushy. 5. Add the Spices: • Once the tomatoes have softened, add turmeric powder, Kashmiri red chili powder, cumin powder, and salt. Mix well and cook for 2-3 minutes until the spices release their aroma. 6. Combine Spinach and Paneer: • Add the spinach purée to the masala and stir well. Cook for 4-5 minutes until the spinach is well incorporated with the spices. • Add the fried paneer cubes and stir gently. Simmer for 5-7 minutes on low heat. 7. Finish the Dish: • Crush the kasuri methi between your palms and sprinkle over the dish. • Stir in the fresh cream and mix well. Let it simmer for another 2 minutes. 8. Serve: • Serve your Palak Paneer hot with naan, roti, or rice. Enjoy your creamy, flavorful Palak Paneer!
