⭐ Ingredients 1 cup dried black-eyed peas (or 2 cans of cooked black-eyed peas) 4 cups water (if using dried peas) 1 medium onion, chopped 2 cloves garlic, minced 1 green bell pepper, chopped 1 carrot, diced 2 celery stalks, diced 1 teaspoon cumin 1 teaspoon smoked paprika 1 bay leaf Salt and pepper to taste 2 tablespoons olive oil Optional: 1 smoked ham hock or cooked bacon for flavor ⭐ Instructions If using dried black-eyed peas, rinse them thoroughly and soak in water for at least 6 hours or overnight. Drain and set aside. If using canned peas, simply drain and rinse them. In a large pot, heat olive oil over medium heat. Add the chopped onion, garlic, green bell pepper, carrot, and celery. Sauté for about 5-7 minutes, until the vegetables are softened. Stir in the cumin, smoked paprika, salt, and pepper; cook for another minute until fragrant. Add the soaked (or canned) black-eyed peas, water, bay leaf, and ham hock or cooked bacon (if using) to the pot. If using dried peas, ensure the water covers them by about an inch. Bring the mixture to a boil, then reduce the heat to low. Cover and let simmer for 1-1.5 hours for dried peas (or about 30 minutes if using canned), or until the peas are tender. Remove the bay leaf and ham hock (if used). Adjust seasoning as needed and serve warm.
