Ingredients: 8 oz whole grain macaroni 1 ½ cup shredded sharp cheddar cheese, reduced fat 12oz fat free cottage cheese Âź cup plus 2 Tbsp Brummel and brown 2 Tbsp all purpose flour 2 cups plain almond milk ½ tsp salt â tsp pepper ½ cup italian or regular panko bread crumbs cooking spray Cook Macaroni according to directions. Drain and set aside when done. In a medium saucepan, melt the Âź cup butter spread on medium heat. Stir in flour until smooth. Pour in milk and stir. Increase heat slightly and gradually bring to low boil, stirring constantly. Cook and continue to stir, until sauce has thickened, about 2-5 minutes. Add salt and pepper and stir in. In a 9X9 casserole dish, sprayed with cooking spray, pour in 1/2 of macaroni. Add 1/2 of the cottage cheese, followed by 1/2 the cheddar. Repeat with remaining ingredients. Pour sauce over macaroni and cheese. Melt remaining butter spread and stir in bread crumbs. Sprinkle over mac and cheese. Bake, uncovered, at 375F for 30-35 minutes Makes 6 servings.
