LTK Storefront: https://www.shopltk.com/explore/CaitC... 🍓🔥RECIPES🔥🍓 Strawberry Mousse Cakes Mousse: 2 cups fresh strawberries, hulled and diced ¼ cup granulated sugar 1 tsp lemon juice ½ cup marshmallow creme 1 tsp vanilla extract 1 cup heavy whipping cream, chilled 2 tbsp powdered sugar 1 tbsp cornstarch Crunch: 1 cup freeze dried strawberries 10 crushed golden Oreos 1 tablespoon sugar 6 tablespoons melted butter (divided) 6 dessert shells In a small saucepan over medium heat, cook strawberries, granulated sugar, and lemon juice for about 5 minutes, stirring occasionally. Turn off heat and stir in vanilla extract. Add cornstarch, blend until smooth, then let cool to room temperature. In a large bowl, beat heavy whipping cream and powdered sugar until soft peaks form. Gently fold in the marshmallow with the cooled strawberry purée until smooth. Refrigerate for at least 2 hours to set. In a food processor or blender, pulse freeze dried strawberries and golden Oreos until they become crumbs. Add in sugar and 3 tbsp melted butter and continue to pulse until combined. Dip sides of dessert shells in melted butter and dip in crunchy coating. Save some coating for topping dessert. Place on serving tray. Pipe cooled mousse into each dessert shell and top with remaining crunch mix. Add strawberry if desired for garnish. Place in fridge for 1 hour before serving. Love Letters Strawberry filling: 2 cups fresh strawberries, hulled and diced ¼ cup granulated sugar 1 tsp lemon juice 1 tsp vanilla extract 1 tbsp cornstarch 1 package pastry dough or see below for recipe In a small saucepan over medium heat, cook strawberries, granulated sugar, and lemon juice for about 5 minutes, stirring occasionally. Turn off heat and stir in vanilla extract. Add cornstarch, blend until smooth, then let cool to room temperature. Preheat oven to 375 degrees. Roll out pastry dough and cut into 8 rectangles. Using a heart shaped cookie cutter, cut hearts out of each rectangle towards the top half. Place the hearts to the side. Spoon some strawberry filling onto each pastry and fold in half. Score the pastry to look like an envelope and use a fork to seal the edges. Bake for 12-15 minutes, until golden brown. Pastry Dough 1 ¼ cups all-purpose flour ½ cup unsalted butter, cold and cubed ¼ tsp salt ½ tsp sugar 3-4 tbsp ice-cold water In a large bowl, whisk together the flour, salt, and sugar (if using). Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingertips, work the butter into the flour until the mixture resembles coarse crumbs with some pea-sized butter chunks. Drizzle in 3 tablespoons of ice-cold water, mixing gently with a fork. If the dough is still too dry, add 1 more tablespoon of water—just until the dough holds together when pressed (don’t overwork it). Gather the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes (or up to 2 days). This allows the butter to firm up and makes rolling easier. On a lightly floured surface, roll out the dough to your desired thickness. Strawberry Cheesecake Oreo Cups 12 Golden Oreo cookies Cheesecake Filling: 8 oz cream cheese, softened ½ cup powdered sugar ½ cup Greek yogurt or sour cream 1 tsp vanilla extract 1 cup heavy whipping cream, whipped to stiff peaks Strawberry Topping: 1 ½ cups fresh strawberries, diced 2 tbsp granulated sugar 1 tsp lemon juice 1 tsp vanilla extract In a small bowl, mix strawberries, sugar, lemon juice, and vanilla. Set aside. In a separate bowl, beat cream cheese and powdered sugar until smooth. Mix in yogurt and vanilla until combined. Gently fold in whipped cream until fluffy and smooth. Divide the Oreo cookies into lined cupcake tins. Spoon or pipe the cheesecake mixture over the Oreos. Spoon the strawberry topping over each cheesecake cup. Press lightly into cheesecake filling.
