Alu Bonda Recipe (Potato Bonda) Padharadhallu (Ingredients): Boiled potatoes – 3–4 Green chillies – 2 (finely chopped) Onion – 1 (finely chopped, optional) Ginger – Β½ inch (grated) Curry leaves – few Coriander leaves – chopped Mustard seeds – Β½ tsp Jeera – Β½ tsp Turmeric powder – ΒΌ tsp Salt – to taste Oil – for frying For batter: Besan (gram flour) – 1 cup Rice flour – 2 tbsp (for crispness) Salt – as required Chilli powder – Β½ tsp Baking soda – a pinch (optional) Water – as required (to make medium-thick batter) 1. Filling: Heat 1 tsp oil in a pan. Add mustard seeds, jeera, curry leaves. Add green chillies, ginger, and onion. Fry slightly. Add turmeric and salt. Mash the boiled potatoes and mix well with coriander leaves. Let it cool and shape into small round balls. 2. Batter: Mix besan, rice flour, salt, chilli powder, and a pinch of soda. Add water little by little to make a smooth, thick batter. 3. Frying: Heat oil in a kadai. Dip each potato ball in the batter and drop into hot oil. Fry till golden brown on medium flame. 4. Serve hot with chutney or tomato sauce.
