If you like my video, please click 'like' and subscribe to my channel ☺ Ingredients: For the Cookies: ½ cup (115 g) unsalted butter, at room temperature ½ cup (100 g) light brown sugar ½ cup (100 g) granulated sugar 1 large egg, at room temperature 1 tsp vanilla extract 1 ¼ cups (185 g) all-purpose flour 1 Tbsp cornstarch ½ tsp baking soda ½ tsp salt 1 ½ cups (265 g) chocolate chips 1 cup (100 g) lightly toasted, chopped pistachios For the Filling: 200 g pistachio cream: freeze the pistachio cream in ice cube trays for easy shaping Directions: 1. Prepare the Pistachio Cream Filling: Scoop the pistachio cream into small portions (e.g., using an ice cube tray) and freeze for at least 1 hour, or until firm. 2. Make the Cookie Dough: Cream the butter with the granulated sugar and the brown sugar until well combined. Beat in the egg and vanilla extract. Sift in the flour, cornstarch, baking soda, and salt. Gradually mix until a soft dough forms. Stir in the chocolate chips and chopped pistachios. 3. Shape the Cookies with Filling: Scoop out a large portion of dough and shape it into a ball. Use your thumb or the back of a spoon to make a small hole or indent in the center of each dough ball. Place a frozen portion of pistachio cream into the hole. Gently pinch the dough around the filling to seal it and reshape it into a ball. Place on a parchment-lined tray or plate. 4. Chill the Dough: Chill the filled dough balls in the freezer for at least 1 hour 5. Bake the Cookies: Preheat the oven to 325°F (162°C). Arrange the chilled dough balls on parchment-lined baking trays, leaving space between cookies. Bake for 18-20 minutes, until golden brown around the edges. Cool the cookies on the tray before handling.
