Ingredients 1¾ cups all-purpose flour -1 cup chocolate chip 3 very ripe bananas ½ cup unsalted softened butter, at room temperature ⅓ - ⅔ cup of sugar ( according to preference) 2 large eggs at room temperature ½ cup natural yoghurt, Greek yoghurt works fine 1 tsp baking soda ½ tsp salt 1 tsp vanilla extract ½ tsp ground nutmeg ( optional Instructions: Preheat your oven to 350°F and line a 12-count muffin tin with muffin liners. Grease the liners with melted butter Mash the ripe bananas in a bowl and set aside whisk together the flour, baking soda, salt, and nutmeg (if using) and set aside. In another large bowl, Cream the Butter and Sugar together until light and fluffy. Beat in the egg until well incorporated, then add the mashed bananas, and vanilla extract. Mix on low speed until combined. Add your yoghurt and mix with a spatula or wooden spoon Gradually fold the dry ingredients into the wet ingredients using a spatula or wooden spoon. Fold until just combined and be careful not to over-mix Gently fold in the chocolate chips. Divide the batter evenly among the muffin cups, filling them about 3/4 full. Top it with the remaining ¼ cup of chocolate chips Bake for about 25 minutes, or until golden brown and a toothpick inserted into the centre comes out clean. Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
