
Creamy mushroom spinach chicken
Today’s colorful plate is a classic and fast and easy. I’m using leftover sauce from my salmon Florentine and adding extra mushrooms and a pan seared chicken breast for a beautiful creamy delight. Before the main fish I have a mixed salad of various homegrown lettuce, baby spinach, carrots, mandarin orange slices, feta cheese and pistachios. The dressing is a garlic honey mustard and the tang goes well with the sweet orange slices. Remember you can decrease your glucose insulin spikes by up to 75% by eating veggies before your main meal.
