My recipe has 1:3 vinegar-to-water, which is milder than most classic pickling ratios . No-Boil Method: This works for quick pickles, but it takes longer to develop flavor I use this simple method for pickling red onions and other vegetables, which always works perfectly! The process is super easy—no need to boil anything. For every 3 cups of water, I add 1 cup of white vinegar and 2 to 2.5 tablespoons of salt. (Some people might find it too salty, so you could adjust the salt to taste.) I mix everything and pour it over thinly sliced red onions in a jar. To enhance the flavor, I also add some black peppercorns and coriander seeds. Since this is a no-boil method, the flavors take a little time to develop, so I let it sit for a day at room temperature and then refrigerate for the best taste. This recipe makes a mild, slightly tangy pickle that works great in salads, sandwiches, and more! You can also experiment by adding garlic, chilli flakes, or other spices for extra flavour. Ingredients: (1:3 vinegar-to-water) • 3-4 medium red onion, thinly sliced • 3 cups cold water • 1 cup white vinegar • 2 to 2.5 tbsp salt (adjust to taste) • black peppercorns • coriander seeds Instructions: 1️⃣ Slice the onions thinly and place them in a clean jar. Add the peppercorns and coriander seeds in the middle and on top of the onions. 2️⃣ Mix the brine: Mix water, vinegar, and salt until dissolved. 3️⃣ Pour the brine over the onions, making sure they are fully submerged. 4️⃣ Let it sit for 1 day at room temp. 5️⃣ Then refrigerate; they taste best after a few hours and stay fresh for up to 2 weeks. 🔥 Pro Tips: If your pickled onions lack a deep color, add a few slices of red cabbage to the jar.
