
Gluten Free Lemon Cookies Recipe
Hello Friends, Today, I am trying the Loopy Whisk's recipe for the gluten free lemon crinkle cookies. I made some changes to adjust the recipe. You can find the original lemon crinkles at the end of the description. Ingredients : 240g flour mix 150 g granulated sugar zest of 2 lemons 70g unsalted butter, melted and cooled until warm ½ tsp xanthan gum 1 tsp baking powder ¼ tsp salt 100 g granulated sugar, for rolling the cookies before baking 90 g powdered/icing sugar, for rolling the cookies before baking Chill the cookie dough in the fridge for at least 2 hours.
