Afghani Chicken Recipe Ingredients: For the paste: 1 cup coriander leaves 5-6 garlic cloves 1-inch ginger piece 2 medium onions (chopped) 2-3 green chilies For marination: 1 tbsp cumin powder 1 tsp black pepper powder 1 tsp garam masala 2 tbsp oil 1 tbsp kasturi methi (dried fenugreek leaves) ½ tsp turmeric powder Salt (as per taste) 500g chicken (bone-in or boneless) For cooking: 1 tbsp ghee 2 bay leaves 2-3 cloves 1 small piece of cinnamon stick (dalchini) Remaining half of the prepared paste Instructions: 1. Prepare the Paste: Blend coriander leaves, garlic, ginger, onions, and green chilies into a smooth paste. 2. Marinate the Chicken: Take half of the paste and mix it with cumin powder, black pepper powder, garam masala, oil, kasturi methi, turmeric powder, and salt. Coat the chicken well with this marinade and let it rest for 1-2 hours. 3. Cooking the Chicken: Heat a pan and fry the marinated chicken until it turns golden brown and is cooked through. Set aside. 4. Prepare the Gravy: In the same pan, add ghee and sauté bay leaves, cloves, and cinnamon stick. Add the remaining half of the prepared paste and fry it well until the raw smell disappears. 5. Final Cooking: Add the cooked chicken back into the pan and mix well with the gravy. Let it simmer for a few minutes until the flavors blend perfectly. 6. Serving: Serve hot with roti, garlic naan, or butter naan.
